Cauliflower Couscous - Your New Rice or Couscous Alternative

Roasted cauliflower is SO good and when you chop it up into very small pieces before roasting, it is a fantastic alternative to rice or couscous! I make this ALL the time since it's such a big hit in our house so figured I'd share the simple preparation steps so you can try it too!

Watch the video to see the debut of Hungry Huey and learn what my favorite potholder is! :) 12 oz fresh cauliflower (chopped small in a food processor or by hand) 2 cloves minced garlic 1 Tbls olive oil 1/4 tsp salt 1/4 tsp pepper Stir it all together, spread evenly on a parchment paper or tinfoil-lined baking sheet, and bake for 20 minutes in a 400 degree F oven. Stir half way through. Let me know what you think!
